Peach Marmelade
Produces 3 kg of marmelade

Cooking time : 1 hour
2 ½ kg. ripe peaches cut in halves.
4 tbs lemon juice
1 ½ kg sugar
250 gr. glucose
Sprinkle the peaches with the lemon juice, as soon as you remove the seed to prevent the peaches from blemishing. In a heavy bottom anti-stick pot place the peaches in layers with sugar in between. Mash the peaches with the palms of your hands in order to mix the sugar. Place the pot on a low flame and stir until the sugar completely dissolves. Increase the flame so that the marmelade will broil. Stir regularly and keep boiling till it becomes transparent and shinny. Add the glucose towards the end, just before you take it off the flame. When you remove it from the flame skim the froth. Let cool for a while and then place in sterilized jars. Cover the jars when the marmelade has cooled completely, then refrigerate. The marmelade should keep for about a year.
